Subway will introduce its new digitally connected restaurant format across all new openings and refurbishments in Europe, the Middle East and Africa (EMEA) from 1 January 2027.
The format, known as Blueprint, includes self-service ordering kiosks, digital order-ready screens and dedicated collection points, alongside ordering through the Subway app and third-party delivery services.
The first Blueprint restaurants opened in the UK and the Netherlands during summer 2026, ahead of the wider rollout announced this week. Under the new format, customers can continue ordering directly from restaurant staff or use self-service kiosks to browse the menu and customise their meals. Digital screens display when orders are ready, while designated collection areas aim to simplify the handover of takeaway and digitally placed orders. The redesign also introduces clearer restaurant layouts intended to support staff managing orders across different channels.
Tracy Gehlan, President of Subway EMEA, said: “Guests want to eat their way, on their own schedule, and Blueprint is how we deliver on that.”
The Blueprint programme extends beyond digital ordering, introducing new restaurant formats and services intended to attract customers at different times of day. These include an expanded breakfast and coffee offer, a Grab & Go service for high-footfall locations such as transport hubs, and an evening dining concept called Subway After Dark, currently being piloted in the Netherlands. The evening concept includes digital menu boards that change to display a different menu, alongside adjustments to the restaurant environment. Subway says the additional formats will be introduced according to individual site requirements and local demand, rather than across every location.
The company is also pursuing a wider expansion strategy across EMEA, with plans to nearly double its restaurant footprint over the next five years.
